Use your air fryer to make a classic fry‑up with bacon, potato pancakes, sausages, tomatoes, mushrooms and an egg hidden in a muffin.

Ingredients

1 serv.
  • English muffin1

    split in half

  • butter½ tsp tsp

    softened

  • mushrooms200g g

    coarsely sliced

  • olive oil½ tsp tsp
  • tomato1

    cut in half

  • sausages2
  • potato pancakes2
  • egg1
  • bacon strips2
  • baked beans½ x 400g can or 200g can

    (optional)

Step-by-step instructions

  1. 1

Preheat the air fryer to 180 °C. Cut a circle out of one half of the English muffin, leaving a 2 cm thick ring. Air‑fry for 5‑6 minutes, remove, then butter the whole half and press the other half onto it. Set aside.

  2. 2

Place the mushrooms in a bowl and drizzle with oil. Season with salt and pepper, toss to coat. Transfer the mushrooms to the air fryer and cook for 4 minutes until they begin to soften. Add the sliced tomato halves, then place them in the air fryer and add the sausages. Cook for 2 minutes, then add the potato pancakes. Cook for another 4 minutes.

  3. 3

Meanwhile, crack the egg into a small cup or ramekin. Place the muffin on a plate, then pour the egg into the cutout on the top of the muffin. Set aside.

  4. 4

At this point your air fryer is probably quite full, so place the mushrooms on top of the tomatoes to free up space. Lay the bacon over the sausages, then carefully place the egg into the muffin. Cook for 8‑10 minutes. If your air fryer is large enough, pour the baked beans into a ramekin and place it to heat, or microwave the beans for 2 minutes.
