Create a festival atmosphere at home with this waffle sandwich from street specialist Killa Waffles. Filled with fried chicken – what could be better?

Combine all the ingredients for the marinade based on the buttermilk, then add the chicken and mix to coat. Cover and refrigerate for at least 2 hours. It can be stored in the fridge for up to 24 hours.
Mix the breading ingredients, except the eggs, with 1 tsp of salt. Mix well. Beat the eggs in a separate bowl. Remove the chicken strips from the marinade, a few at a time, coat them in the breading mixture, then in the egg, and coat again in the breading. Place on a tray lined with foil.
For the waffles, combine flour, baking powder, bicarbonate and brown sugar. Add ½ tsp of each salt and black pepper. Beat the eggs, then gently fold them into the dry mixture. Add the buttermilk and mix until smooth, then add melted butter. Add pancetta strips if using.
To fry the chicken, heat a pot filled one‑third with sunflower oil over medium‑high heat to 175 °C, or until a piece of bread dropped in the oil browns in 30 seconds. Fry the chicken in batches until golden‑brown on both sides and cooked through. Transfer to a plate lined with paper towels to drain excess fat. If the chicken strips brown too quickly, lower the heat.
Cook the waffles in a waffle iron or press for 5‑6 minutes until done and golden. Cut each waffle in half. On the lower half spread garlic sauce, arugula, tomatoes and chicken strips, then top with the other waffle half. Serve immediately.
