Family Meals: Easy Fish Pie Recipe

A simple fish pie recipe that is quick and easy to make. Portion into individual molds and freeze for quick meals for little ones, or bake in a large dish for a perfect family dinner.

Ingredients

4 serv.
  • Maris Piper potatoes1kg kg

    peeled and halved

  • milk400ml ml

    plus a splash

  • butter25g g

    plus a knob

  • plain flour25g g
  • green onion4

    finely sliced

  • fish pie mix1 x pack

    (cod, salmon, smoked haddock etc, weight around 320g-400g depending on pack size)

  • Dijon or English mustard1 tsp tsp
  • spring onion bunch½ a 25g pack or a small

    finely snipped

  • frozen cornhandful
  • frozen peashandful
  • grated cheddarhandful

Step-by-step instructions

    Preheat the oven to 200 °C (convection 180 °C, gas mark 6).

    Place the 1 kg of peeled and halved potatoes in a pot and cover with enough water to submerge them. Bring to a boil, then simmer over low heat until tender.

    After cooking, drain thoroughly and mash the potatoes with a splash of milk and a knob of butter. Season with ground black pepper.

    In another pan melt 25 g butter, add 25 g flour and the 4 finely sliced green onions, heat gently while stirring constantly until the butter melts. Cook 1–2 minutes.

    Gradually whisk in 400 ml milk with a whisk (or mixer). Bring to a boil, stirring constantly to prevent lumps and sticking. Cook 3–4 minutes until the sauce thickens.

    Remove from heat and stir in 320–400 g fish mixture, 1 tsp Dijon or English mustard, a small bunch of finely chopped spring onion, a handful of corn and a handful of peas. Transfer to a baking dish, or into 6–8 individual ramekins.

    Spread the mashed potatoes on top and sprinkle with a handful of grated cheddar.

    Bake in the oven for 20–25 minutes until the top is golden and bubbles appear at the edges. Or cover and freeze the pie or mini-pies for later.
