Easy Tzatziki

Enjoy tzatziki both as a sauce and a dip for barbecue. A small store‑bought pack never lasts, and making it yourself is so easy.

Ingredients

6 serv.
  • cucumber1 large

    peeled, halved and seeded

  • Greek yogurt500g g
  • garlic clove1 small

    minced or finely chopped

  • white wine vinegar3 tbsp tbsp
  • olive oil2 tbsp tbsp
  • mint leavessmall handful of

    or dill sprigs, finely chopped

Step-by-step instructions

    Coarsely grate the cucumber lengthwise to obtain long strips, transfer to a sieve set over a bowl or sink, add a generous pinch of salt and let sit for 10 minutes. Transfer the yogurt, garlic, vinegar and olive oil into a bowl and season with black pepper.

    Squeeze out as much liquid from the cucumber as possible with your hands, then mix it with the yogurt mixture together with the mint, taste and serve. It can be prepared a day ahead and chilled – give it a good stir before serving.
