Easy Roast Chicken Soup in a Slow Cooker

Prepare a warming soup made from roast chicken using a slow cooker. Great for using leftover chicken after Sunday roast and freezes well.

Ingredients

2 serv.
  • onion1

    chopped

  • large carrot1

    chopped

  • thyme½ tbsp tbsp

    leaves, roughly chopped

  • chicken broth700ml ml
  • frozen peas100g g
  • leftover roast chicken150g g

    shredded, skinless

  • Greek yogurt1½ tbsp tbsp
  • garlic clove½ small

    minced

  • lemon juicesqueeze

Step-by-step instructions

    Place the onion, carrot, thyme, broth and peas into the slow cooker and select the 'thick soup' function. Make sure not to fill the cooker above the maximum fill line.

    After the cycle finishes, add the shredded roast chicken and let it warm while you whisk together the yogurt, garlic and lemon juice. Season the soup and ladle it into bowls. Add a little yogurt and serve.
