Spicy, aromatic and intensely flavored Thai “drunken noodles” – a perfect quick meal ready in just 20 minutes

Ingredients

2 serv.
  • flat rice noodles200g g

    (choose wide noodles, if possible)

  • neutral-tasting oil2 tbsp tbsp

    (such as vegetable)

  • garlic cloves3

    finely chopped

  • bird's eye chili3

    finely chopped

  • sirloin steak225g g

    thinly sliced

  • broccoli with long stems100g g

    cut into 3-4cm pieces

  • Thai basil leaveslarge handful of handful
  • light soy sauce3½ tbsp tbsp
  • oyster sauce3½ tbsp tbsp
  • fish sauce1 tsp tsp
  • sugar1 tbsp tbsp

Step-by-step instructions

    Cook the noodles according to the package instructions, then drain and set aside. Mix all sauce ingredients in a small bowl or jug and set aside.

    Heat the oil in a large wok or pan over high heat and quickly stir‑fry the garlic and chilies for 20 seconds until they start to turn golden. Add the steak and fry for 1 minute until browned. Add the broccoli and fry another minute, then add the noodles and the sauce. Stir‑fry for another 1‑2 minutes until everything is well combined and heated through.

    Add the basil, stir and turn off the heat. Serve immediately to avoid overcooking.
