Ingredients

2 serv.
  • cottage cheese100g g
  • oat flakes150g g

    (gluten-free if needed)

  • eggs2
  • milk50ml ml

    (any type)

  • baking powder½ tsp tsp

    (gluten-free if needed)

  • vanilla extract1 tsp tsp

    (optional)

  • maple syrup2 tsp tsp

    (optional)

  • neutral oil2 tsp tsp

    or unsalted butter for frying

  • hard-boiled egg

    and roasted tomatoes, or

  • fresh berries

    and maple syrup

Step-by-step instructions

    Place all the pancake ingredients, except the oil, in a blender, adding vanilla and maple syrup only if you want sweet pancakes. Blend until smooth batter. Alternatively, transfer the ingredients to a jug and use a hand blender.

    Heat a little oil or butter in a non‑stick frying pan over medium heat and add a few tablespoons of batter, forming small pancakes. Cook in batches if necessary.

    Cook the pancakes for 2‑3 minutes until bubbles appear and the top sets. Flip and cook another 1‑2 minutes until golden on both sides. Keep the pancakes warm while you finish the remaining batches.

    Serve the pancakes topped with a hard‑boiled egg and roasted tomatoes, or with fresh berries and a drizzle of maple syrup.
