Make a quick chicken ramen with plenty of vegetables. Ready in under 20 minutes, perfect as a tasty lunch.
Heat a grill or a large skillet over medium heat and sear the chicken breasts for 5‑7 minutes until they turn golden. Flip and cook another 4‑5 minutes until done. Slice thinly and set aside. Sauté the stir‑fry vegetables in the skillet for 2 minutes until they soften slightly.
Meanwhile, cook the ramen noodles in a pot of boiling water according to the package instructions, adding the egg to the pot for 5‑6 minutes (depending on how runny you like the yolk). Drain and set aside. Peel the egg, cut it in half and set aside.
Heat the broth in a saucepan over medium heat until it is very hot, avoiding a boil.
Divide the noodles between two deep bowls, then add the stir‑fry vegetables, sliced chicken, egg halves, and broth. Sprinkle with chopped chives and chili flakes before serving.
