Enjoy this chocolate concrete cake when you need a sweet treat. They pair wonderfully with a cup of tea or coffee.
Preheat the oven to 180°C/160°C with convection/gas mark 4. Grease a 20 cm square tin and line it with baking parchment. In a bowl, mix the melted butter and vanilla. In another bowl, combine the caster sugar, flour and cocoa.
Pour the wet ingredients into the dry ones and whisk together, then add the egg and whisk again until smooth. Spoon the batter into the prepared tin. Brush the top with water and sprinkle with granulated sugar.
Bake for 30–35 minutes. Let it cool in the tin for 5 minutes, then cut into squares and transfer to a wire rack to cool completely.
