Try a new twist on the classic Mexican snack by adding spicy chili, sweet corn and a splash of lime for tasty vegetarian quesadillas.

Heat the oil in a pan, add the onion and sauté for 10 minutes until soft. Add the chili and ground coriander and cook for another minute. Add the canned corn, green onion and lime zest. Season to taste.
Place the mixture on one tortilla, then sprinkle with cheddar and mozzarella and cover with the second tortilla. Heat a pan over high heat. When hot, add the quesadilla, cook for 2 minutes on one side, then flip and cook another 1–2 minutes until the cheese melts. Cut into four pieces and serve with chili sauce if desired.
