Slice the chicken breasts horizontally in half, then cut them into thin strips. Place them in a bowl, add the remaining ingredients and rub them into the chicken with your hands.
Heat the oil for the pepper mixture in a large skillet and sauté the onion pieces for 6 min until soft. Increase the heat to high so the pieces slightly char at the edges, season well and lift them onto a tray with a slotted spoon, leaving them warm.
Add the peppers in batches, cook them similarly, then transfer them to a tray together with the onion. Cook the tomatoes the same way and add them to the peppers.
Heat a grill pan or use the same skillet and cook the chicken in batches over high heat – let it brown slightly at the edges but do not overcook. Transfer it to a tray to keep warm.
Heat the tortillas on the grill, then wrap them in foil and keep warm in the oven, or microwave according to the package instructions.
