Cheese-bacon scones

These savory brunch scones can be made ahead and reheated when ready to serve. Garnish with a generous layer of butter.

Ingredients

  • bacon strips10

    streaky bacon

  • self-raising flour275g g
  • baking powder½ tsp tsp
  • milk150ml ml
  • vegetable oil50ml ml
  • egg1
  • chopped green onionhandful

  • grated cheddar150g g

Step-by-step instructions

    Preheat oven to 200 °C/180 °C convection/gas 6 and grease a 12‑hole muffin tin. In a pan over medium heat fry the bacon for 5 minutes until golden. Let cool, then chop and set aside.

    In a bowl combine flour, baking powder and 1 tsp sea salt. Using fingertips rub butter into the flour mixture until it resembles crumbs.

    In a small bowl whisk milk, vegetable oil and egg. Pour into dry mixture and gently stir until batter becomes wetter (some lumps will remain). Add bacon, chopped green onion and grated cheddar, then spoon batter into muffin tin.

    Place the muffin tin in the oven and bake for 20 minutes or until the top is golden‑brown. Serve warm.
