Prepare this tasty and light salsa that goes with anything. Perfect accompaniment to tacos or tortilla chips.
Place the tomatoes, onion, jalapeños and garlic cloves on a hot barbecue, grill pan or a hot dry skillet. Cook for 6‑8 minutes until they are charred on all sides. Do not remove the black skin from the tomatoes or jalapeños—it adds flavor.
Remove the skin from the garlic cloves. Crush them together with 1 tsp salt using a mortar or a thick pestle, then transfer to a bowl. Peel and coarsely chop the onion, crushing it with the mortar. Do the same with the charred jalapeños and tomatoes.
Mash everything together in the bowl, then add 4‑5 tbsp water to thin, lime juice and cilantro. Mix well and let stand for 10 minutes before serving. Store in the refrigerator for up to two days.
