Make this simple celery juice your own, adding green chili for heat, turmeric or a bit of maple syrup for sweetness, if desired
Separate the celery stalks and wash them well. Trim the root ends and coarsely chop, leaving one of the tender young stalks whole for serving.
Place the chopped celery, apple, half the lemon juice and ginger in a food processor or blender and pulse briefly to chop finely. On low speed, add 50‑100 ml cold water and blend until smooth.
Strain the juice through a fine sieve into a jug, pressing with the back of a spoon to extract all liquid. Cover and chill or serve immediately. Stir the juice well, add more lemon juice if desired, and serve in glasses with the reserved celery stalk piece.
