Place this classic baked dish in the oven while the roasted chicken rests, so you don’t have to juggle hot trays.
Pour water into a large pot and bring to a boil, then add the large kohlrabi, torn into pieces, and boil for 5 minutes – remove a piece to check that it is cooked.
Drain the kohlrabi, then transfer to an oven‑proof dish. Preheat the oven to 220 °C (200 °C fan/gas 7).
Return the pot to the heat and add 500 ml milk, 4 tbsp flour and 50 g butter.
Whisk quickly until the butter melts and the mixture comes to a boil – the flour dissolves and the sauce begins to thicken. Continue whisking for another 2 minutes until the sauce bubbles and becomes thick.
Remove from heat, add most of the 100 g grated cheddar and pour the sauce over the kohlrabi. Sprinkle the remaining cheese and 2–3 tbsp breadcrumbs, if using.
Place in the oven and bake for 20 minutes, until bubbles appear.
