Learn to make sweet, sticky caramelised onions. Perfect for adding to pasta, quiches or as a filling for burgers and sausages.

Ingredients

  • olive oil2 tbsp tbsp
  • large onions3

    (red or white), sliced

  • saltpinch of
  • soft brown sugar2 tbsp tbsp
  • balsamic vinegar1-2 tbsp tbsp

Step-by-step instructions

    Heat the oil in a large deep pan over low heat.

    Add the onions with a generous pinch of salt and cook slowly for 30–40 minutes, stirring occasionally to prevent sticking or burning, until the onions become soft and golden. If the onions start to stick, add a little water to the pan and stir well.

    Add the sugar and vinegar to give a sweet‑sour chutney flavor. Continue cooking over low heat for another 5 minutes, stirring occasionally, until the mixture becomes sticky, the sugar melts and the vinegar evaporates. The onions are now ready to serve or use in a recipe.
