Golden crispy onion rings – the undisputed king of sides. Serve them with our thick T-bone steak for the perfect steak dinner.
Place the onion in a large bowl, cover it with buttermilk and seal with plastic wrap. Let it soak at room temperature for 30 minutes to 1 hour.
Spread 100 g of all‑purpose flour on a large plate and mix with cayenne pepper and a small amount of seasoning. Drain the onion rings, then coat them in the seasoned flour.
Fill a large pot with oil up to half and heat until the temperature reaches 180 °C, using a thermometer (or until a piece of bread browns in 20–30 seconds). Alternatively, preheat the deep‑fryer to 180 °C. Prepare the batter by mixing the remaining all‑purpose flour with corn starch and a pinch of salt. Make a well in the centre and pour in the beer. Stir until the mixture is smooth.
Dip each onion ring into the batter and fry for 3–4 minutes until crispy. Drain on a paper towel and sprinkle with the coarse sea salt crystals.
