Grill halloumi and corn cobs with smoked paprika for a bright summer salad that works as a main dish or a side. If you don’t have a grill, use a grill pan.
Place the sliced red onion, avocado, and cherry tomatoes on a large plate. Drizzle with lime juice, add olive oil, season with a pinch of salt and toss. Set aside.
Heat the grill or a grill pan over high heat. Brush the corn cobs with a little oil, sprinkle with smoked paprika and a pinch of salt. Thread the cubed halloumi onto metal skewers and grill them together with the corn over the coals until the halloumi turns golden and the corn is lightly charred in spots.
Allow the corn to cool slightly, then stand the cobs upright on a board and carefully remove the kernels. Add the cooked corn to the salad together with the halloumi, sprinkle with coarsely chopped cilantro and toss again. Serve immediately while still warm, or let cool to room temperature.
