Forget store‑bought mayonnaise — make it yourself. It takes only a few minutes, and the result is a smooth, flavorful sauce that enhances any dish.
Transfer the egg yolks and Dijon mustard into a deep bowl, add salt and pepper, and whisk with a whisk until smooth.
While whisking continuously, drizzle the sunflower oil drop by drop until the mixture thickens; once the yolks and oil combine, pour the oil in a thin stream without stopping the whisk, to prevent the mayonnaise from separating.
When the mayonnaise becomes thick and creamy, add the white wine vinegar or lemon juice, season with salt and pepper to taste, and give it a quick final mix.
Transfer the finished mayonnaise into a clean jar, seal the lid, and store in the refrigerator for no more than two days.
