A hearty dinner in 30 minutes made from leftover Sunday roast meat – perfect when time is short and appetite is big.

(any variety) or 250 g ready‑cooked rice in package

Heat half the oil in a large non‑stick pan over high heat. Pour in the beaten egg, spread it quickly across the surface and let it set for about a minute. Carefully flip it like a pancake and fry for another minute on the other side. Then place the cooked omelette disc onto a plate.
In the same pan add the remaining oil and heat it. Add the sliced onion and sauté for 3‑4 minutes until golden. Add the minced garlic, curry powder and ketchup, stir. Add the frozen peas and cook another 1‑2 minutes until softened. Add the rice, sliced meat and a cup (100 ml) of water, cook over medium heat for 5‑6 minutes, stirring constantly until the water evaporates and the rice takes on a fragrant curry colour.
While the rice is frying, cut the omelette into long strips. Add them to the rice together with soy sauce, stir quickly and fry for a few more minutes. Transfer the finished rice to plates straight from the pan, serve with extra soy sauce for drizzling.
