When the sun is blazing and the grill aroma fills the air, try this incredibly flavorful pork recipe highlighted by fresh lemon, aromatic sage and delicate prosciutto — the perfect outdoor dinner.
Combine in a blender the prosciutto, zest of three lemons and juice from 1½ lemons, chopped sage, and enough spices, until you obtain a thick paste. Set aside and keep the remaining lemons.
Slice each fillet lengthwise down the center, not cutting all the way through. Open the meat like a “butterfly” and flatten it slightly. In each fillet make about 10 deep slits, covering roughly three quarters of the thickness. Rub the paste onto the meat and into the slits.
Brush the fillet with oil. Grill the meat skin-side down for 6‑8 minutes, then flip and cook another 6‑8 minutes, until it is tender and fully cooked.
Transfer the pork to a platter and, while still hot, lay thin slices of cold butter on it. Let sit 1‑2 minutes for the butter to melt. Squeeze the remaining lemon juice (or use fresh) over the meat. Sprinkle with sage sprigs and serve, sliced into thick pieces.
