Turn beloved banana bread into a batch of fragrant muffins that impress with a delicate cream and caramel with a subtle salty note – an ideal dessert for any time.

Step-by-step instructions

    Preheat the oven to 200 °C (180 °C convection/gas 6). Prepare a muffin tin by greasing it and lining with paper liners. In a large bowl, mash the three ripe bananas, add 50 g of yogurt and mix. In a separate bowl, sift together 100 g spelt flour, 120 g plain flour, 2 tsp baking powder, 1 tsp ground cardamom and a pinch of salt, then combine.

    In the mixer bowl add the eggs and sugar, whisk with a whisk until pale and fluffy – about 3 minutes. Gradually pour in the melted butter in a thin stream, then add the vanilla. Reduce speed, then gradually add the flour mixture by 2 tbsp at a time, alternating with the yogurt and banana mixture, until the batter comes together. Fold in the chopped walnuts and mix for no more than 20 seconds. Divide the batter among the cups. Bake for 25‑30 minutes or until a skewer inserted in the centre comes out clean.

    Meanwhile, make the salted caramel: in a non‑stick skillet melt 40 g unsalted butter together with 150 ml heavy cream and 130 g light muscovado sugar, bring to a gentle boil. Remove from heat, add a generous pinch of sea salt – enough to highlight the flavor while keeping the sauce aromatic, not overly salty.

    When the muffins are done, remove them from the oven and let cool on a rack. Whip the heavy cream to soft peaks, gently fold in 2 tbsp yogurt and add the sliced remaining banana. Using a spoon or pastry bag, pipe the cream onto the muffins, top with banana slices and drizzle with salted caramel.
