Baked Olives with Orange Zest and Bay

  • large orange1
  • extra-virgin olive oil4 tbsp
  • bay leaves2
  • garlic cloves1

    chopped

  • black Provencal olives200 g

    pitted

Step-by-step instructions

    Preheat the oven to 160 °C (convection 140 °C, gas mark 3). Cut a large square of foil and place it in a small baking dish. Using a sharp knife, remove two wide strips of orange zest.

    Add the orange juice, olive oil, bay leaves, chopped garlic and olives, and gently stir.

    Wrap the foil into a tight packet, sealing it completely, and bake in the oven for 10–15 minutes until heated through. Serve hot or warm – an ideal light snack before lunch.
