Baked Cod with Goat Cheese and Thyme

A light, gluten‑free dinner that delights the palate without adding calories – lean white cod fillet, delicate goat cheese and fresh spinach rich in vitamin K create a true harmony on the plate.

Ingredients

2 serv.
  • rapeseed oil1 tsp
  • garlic1

    grated

  • spinach200 g
  • cod fillets, skinless2 x 125 g

    fillet

  • soft goat cheese25 g
  • tomatoes2

    each cut into 3 pieces

  • a few thyme leaves

    for garnish

Step-by-step instructions

    Preheat the oven to 200 °C (180 °C with convection) or gas mark 6.

    Heat the rapeseed oil in a non‑stick skillet, add the grated garlic and sauté until fragrant.

    Add the spinach and stir until it wilts.

    Transfer the spinach to the bottom of two gratin dishes, then place the cod fillets on top.

    Evenly distribute the goat cheese, then add the sliced tomatoes.

    Sprinkle with thyme leaves and bake for 10 minutes until the fish is tender and flakes easily.

    Serve directly in the dishes, optionally garnished with fresh lemon juice.
