A warm, aromatic dessert that highlights the flavor of autumn apples – an ideal autumn indulgence for your kitchen.
Preheat the oven to 200 °C (180 °C convection, gas mark 6). With a sharp knife make a cut around the equator of each apple.
Place the apples in a baking dish and add a little water to the bottom.
In a large bowl combine the finely chopped ginger, ground cinnamon, sliced prunes and sugar. Stuff the apples with the mixture, packing it tightly.
Place a piece of butter on each apple and bake for 35‑40 minutes until they become soft. Test doneness by inserting a knife – it should glide through easily.
The apples can be prepared a day ahead and then reheated in the oven or microwave.
Remove the dish from the oven and drizzle the apples with the remaining liquid. Serve hot or warm together with a serving of vanilla ice cream.
