Place the shrimp in a bowl, add 2 tbsp lime juice, 1 tsp salt and 3 finely chopped garlic cloves. Mix and let marinate for 1 hour.
In a large pot heat the coconut oil. Add the chopped green onion and onion, sauté for 5 minutes, then add the thinly sliced red pepper, chili flakes, paprika and the remaining garlic. Stir.
Add the chopped plum tomatoes, coconut milk and a pinch of salt. Bring to a gentle boil, reduce heat and simmer for 10 minutes until the sauce thickens slightly.
Add the shrimp together with the marinade and the remaining lime juice. Simmer over low heat until the shrimp turn pink, about 3 minutes.
Remove the pot from the heat, sprinkle with chopped cilantro and serve with steamed rice.
