Aromatic, quick vegetable stir‑fry in one pan – only five ingredients, ready in 30 minutes!

Ingredients

4 serv.
  • basmati rice250g g
  • large aubergines2

    cut into quarters, then into wedges

  • red peppers2

    slice into thin strips

  • green onions8

    7 pieces cut lengthwise into quarters, 1 piece thinly sliced

  • black bean sauce (220 g can)

    sauce

  • peanut or vegetable oil tbsp

Step-by-step instructions

    Cook the basmati rice according to the package instructions.

    While the rice is cooking, heat a wok (or deep skillet) and add the oil.

    When the oil is hot, stir‑fry the large aubergines for 10–12 minutes until they become golden and tender.

    Add the red peppers and green onions, cook for another 6 minutes until the vegetables are soft but still crisp.

    Stir in the black bean sauce and 2 tbsp water, mix and heat until smooth.

    Serve the stir‑fry with basmati rice, sprinkled with finely sliced green onions.
