Grilled vegetables develop a rich flavor that is perfectly highlighted by aromatic toasted sesame and salty feta – a true spring symphony on your plate.
Heat a small pan, add the sesame seeds and toast, shaking the pan occasionally to prevent burning. When fragrant and light brown, transfer them to a plate.
Steam the asparagus for 3–4 minutes until almost tender. Transfer it to a bowl of ice water, cool, then drain and pat dry with a kitchen towel. In the same water, cook the peas for 3 minutes, then drain and quickly cool under cold running water. Slice the zucchini diagonally, about 0.5 cm thick.
Heat a grill pan to very high heat. Brush the asparagus and zucchini slices with oil and grill in batches until they develop nice dark‑brown streaks. Then cut the asparagus into 5 cm pieces.
Combine in a large bowl the asparagus, zucchini, peas, arugula, feta crumbs and the zest of half a lemon. Season with freshly ground black pepper and sprinkle with toasted sesame seeds just before serving.
