Quickly prepare fragrant Asian prawn noodles – in just a few minutes you’ll have a true flavor journey on the table. Spicy heat, a light tang and fresh herbs create a perfect balance, and you can substitute the prawns with leftover chicken if desired.

Place the noodles in a bowl, cover them with boiling water so they are fully submerged, let them soak for 5 minutes, then drain the water.
Meanwhile, pour 450 ml of water into a wok or large skillet, add garlic, ginger, coriander leaves and stems, chili, tamari, green onions and sugar peas. Bring to a boil, reduce the heat and simmer for 3 minutes, then add the noodles and bean sprouts to warm them.
Add the cooked prawns, lime zest and juice, coriander leaves and mint (optional). Bring to a boil, remove from heat and serve in deep bowls, drizzling a few drops of sesame oil if desired.
