Aromatic Soy Pork with Greens and Green Onion

Step-by-step instructions

    Slice the pork into long thin strips. In a small covered saucepan bring the chicken broth, soy sauce, dry sherry, five‑spice mixture (or paste), ginger, garlic and green onion to a gentle simmer. After 2 minutes, when the aromas combine, add the pork, cover and simmer without bringing to a boil. After about 5 minutes the pork will change colour and become firm — done.

    Place the flat rice noodles in a bowl of boiling water and let sit for 4 minutes. Slice the bok choy (or Chinese cabbage leaves) crosswise into strips 2.5 cm wide. Drain the noodles, toss them with a little sesame or vegetable oil and toasted sesame seeds.

    When the pork is done, add the bok choy and simmer for another 1 minute. To serve, spread the noodles in a deep bowl, top with pork pieces and the other ingredients, pour over the broth, and sprinkle with cilantro leaves. Prepare paper napkins — they’ll be needed for noisy slurping of the noodles.
