Delicate pancakes with fragrant apricots, highlighted by sweet honey butter – an ideal dish for a relaxed brunch that will surprise even the most demanding gourmets.
For the honey butter, beat the softened butter with pure honey, shape it into a log, wrap it in cling film and chill in the refrigerator until needed (it keeps for up to a month).
In a large bowl sift the flour together with the leavening agent, baking soda and a pinch of salt, add the sugar and mix. Make a well in the centre, whisk the egg with the milk, pour the mixture into the well, stirring gradually to avoid lumps. Add the finely chopped dried apricots and combine the ingredients.
Heat a non‑stick pan over low heat, lightly oil it. Pour 4 tbsp of batter, cook for 1 minute until bubbles appear on the surface. Carefully flip with a spatula and cook another minute until golden. Repeat with the remaining batter. Serve the pancakes warm, optionally toast them and spread with honey butter.
