Juicy apples combined with fragrant almond crumble make an ideal autumn dessert, contrasting tender pastry with a crisp topping. Prepare it and your table will fill with the warmth and aroma of homemade baking.

Prepare the crumble. In a large bowl sift 2 tbsp flour, 50 g ground almond, 70 g sugar and a pinch of salt. Add 70 g cold butter, cut into cubes, and rub it in with your fingers until the mixture resembles bread crumbs. Stir in 30 g flaked almond, mix and chill in the refrigerator – the crumble can be prepared ahead of time and kept for up to 2 days.
Preheat the oven to 200 °C (180 °C with convection, gas 6) and prepare a baking tray. Peel 8 apples, remove the core and slice them thinly. In a bowl combine the apples with 50 g sugar, ½ tsp spice mix and 50 g flour, mixing well. Roll out the 500 g shortcrust pastry on a lightly floured surface to fit a 20‑22 cm diameter tin. Place the pastry in the tin, trim excess and press the edges. If desired, form a strip from the leftover dough, cut it into three long strips and braid a 1 cm wide braid, tie it around the rim of the tin and brush with beaten egg.
Spread the apple mixture onto the prepared base, sprinkle the crumble evenly. Bake for 35‑40 minutes until the top is browned and the crumble turns golden. Let the pie rest for 10 minutes, then serve warm with whipped cream, custard or ice cream.
