Italian classic with an unexpected twist — the perfect dessert for a Sunday lunch.
Preheat the oven to 200 °C (gas 6, fan 180 °C). Halve the peaches, remove the pits, then use a sharp‑edged spoon to scoop out a little flesh from the center of each half. Set the scooped flesh and the peach halves aside.
Place the amaretti biscuits, blanched almond and chocolate in a food processor and pulse briefly until the mixture resembles coarse gravel. Add the scooped peach flesh, beaten egg and honey, and blend for another second or two until combined — do not overmix.
Spoon the filling into the peach halves, lifting it slightly. Arrange the peaches in a single layer in a heavy baking dish and bake for 25‑30 minutes until the flesh is tender and the filling is nicely browned. Serve hot with a portion of mascarpone or crème fraîche and a dusting of sifted cocoa powder.
