7-Layer Beet Salad

This 7-layer beet salad is a real find! Garnished with boiled beets, orange segments, chopped pistachios, creamy truffle ricotta and a hint of fresh mint. So fresh, so tasty!

Ingredients

6 serv.
  • shredded cabbage2 cup
  • balsamic ready sauce, simple green salad dressing or just olive oil and lemon0.25 cup
  • oranges, sliced into rounds2
  • small boiled beets (2 packages if buying Love Beets)8
  • ground shallot1
  • truffle ricotta or ricotta0.5 cup
  • pistachios, chopped0.5 cup
  • fresh mint or other chopped herbs to taste (basil, chives or thyme would be good)2 tablespoon

Step-by-step instructions

    Massage the cabbage with a small amount of dressing until it softens. Trust me – the flavor will be much better.

    Slice the beets, oranges and shallot.

    Spread a little of your creamy element onto the serving plate. For a single serving, use about 3 tablespoons. For 4‑6 people, about ½ cup.

    Layer the remaining six ingredients: the massaged cabbage, beets, oranges, shallot, pistachios and herbs. Finish with olive oil, salt and pepper to taste. I love this salad with a big piece of good focaccia.
