Try making your own Spanish-style coffee. Traditionally, the milk in café con leche is hot and only lightly foamed – but the key to the recipe is a ratio of 1:1 coffee to milk

Ingredients

1 serv.
  • whole cow’s milk100ml ml

(or UHT for that distinctive Spanish taste and mouthfeel)

  • sugar

    to taste

  • strong espresso100ml ml

best made with freshly ground beans

Step-by-step instructions

  1. 1

Put the milk and sugar, if using, in a small saucepan and heat until small bubbles appear around the edges. Continue to heat until steaming hot (65–70C on a thermometer) and lightly whisk.

  2. 2

Pour the espresso into a cup and pour over the milk.
