Mom's Apple Cake

My mother gave me this recipe a long time ago. Sadly, she's no longer with us to make it, but I hope others will enjoy it.

Ingredients

12 serv.
  • sugar1 3⁄4 cups
  • vegetable oil1 cup
  • cinnamon1 1⁄2 teaspoons
  • cooking apples4

    peeled, cored, and thinly sliced

  • eggs3
  • flour2 cups

    sifted

  • baking soda1 teaspoon
  • raisins1 cup

Step-by-step instructions

    Beat together sugar, oil and eggs with an electric mixer. Combine the flour, cinnamon and baking soda and add to the sugar mixture. By hand, stir in the apples and raisins, until well blended.

    Pour into a 9x13x2-in. baking dish and bake at 350 degrees for one hour. Remove from oven and cool completely, then cut into squares to serve. (If covered and stored in the fridge, it'll keep for four or five days.).
