This is a delicious cool sauce to be served with Lemon and Onion Marinated Beef and Crunchy Bottom Butter Rice.

Ingredients

6 serv.
  • plain yogurt (can be low or non fat)1 quart
  • medium cucumber1
  • green onions, stalks4 -5
  • lemon juice (or more, depending on taste, bottled is fine)2 tablespoons- 1/4 cup
  • dried dill (I use even more)1 -2 tablespoon

    I use even more

  • grinds pepper (a pinch or two)3

Step-by-step instructions

  1. 1

Peel and dice cucumber into 1/8-1/4 inch pieces (remove seeds first if desired).

  2. 2

Slice green onion into thin rings.

  3. 3

Combine cucumber, green onion, lemon juice, dill, and pepper with yogurt and stir to incorporate.

  4. 4

Add more lemon juice, green onions, dill, and pepper to taste; this recipe is easily adapted.

  5. 5

Refrigerate overnight. Keeps for several days.

  6. 6

For a smoother sauce, grate peeled cucumber and chop green onion into very small pieces (may need to use less onion). Use plain soy yogurt for a vegan sauce.
