Lamb with Marmalade Sauce

A nice variation to lamb. You can use regular marmalade but it sweetens the taste.

Ingredients

4 serv.
  • boneless lamb, cut into 3/4 " cubes2 lbs
  • onions, chopped2
  • clove garlic, minced1
  • butter3 tablespoons
  • bitter orange marmalade (available in specialty shops)2 cups

    (available in specialty shops)

  • malt vinegar3 tablespoons
  • fresh mint, chopped2 tablespoons

    (or 2 tsp dried)

  • salt1⁄2 teaspoon
  • cayenne pepper1⁄4 teaspoon
  • pepper

Step-by-step instructions

  1. 1

    Melt the butter, over moderate heat, in a large saucepan, add the onions& garlic.

    Cook until just beginning to brown-5 minutes.

    Add the lamb and cook until browned lightly 8-10 minutes.

    Add the marmalade, vinegar, mint, salt& cayenne.

    Cook, stirring once in a while, covered for about 20 minutes.

    Season to taste.
