Green Coconut Curry With Vegetables

Ingredients

4 serv.
  • green curry paste1 -4 tablespoon

    or 1-4 tbls. jalapeno pepper and cilantro

  • coconut milk7 ounces
  • evaporated milk7 ounces
  • soy sauce1 tablespoon
  • slice gingerroot, peeled and shredded1 1⁄2 inches
  • kaffir lime leaves6 -8

    or zest from 1 lime

  • chopped vegetables4 cups

    zucchini, cauliflower, broccoli or carrots

  • cooked white rice4 cups

    or noodles

  • fresh basil leaves10

    minced

Step-by-step instructions

    In a large frying pan or wok bring the curry paste, coconut milk and evaporated milk to a simmer. Stir in soy sauce, ginger, lime leaves or zest and vegetables; simmer until tender, about 5 to 8 minutes. Remove and discard the lime leaves.

    Serve the curry over rice or noodles. Garnish with the basil leaves. Enjoy!
