Fruit rice paper rolls with coulis dip

Fill rice paper sheets with tropical fruits for a portable dessert perfect for picnics. Serve with a mixed‑berry coulis for dipping.

  • kiwi2
  • pineapple½ small
  • mango1 small
  • blueberries75g g
  • rice paper sheets8
  • frozen mixed berries250g g

    defrosted

  • honey3 tbsp tbsp

    maple syrup or other sweetener

Step-by-step instructions

    For the coulis, blend the berries and honey in a kitchen processor (or in a jug using a hand blender) until the mixture is very smooth. If needed, add a few tablespoons of water to thin it.

    Prepare all the fruits by peeling and removing pits or cores as needed. Thinly slice a few pieces of each fruit for garnish. Coarsely chop the remaining fruit.

    Soften the rice paper sheets by immersing them in a wide, shallow dish of water for a few seconds. Transfer to a work surface, then place a layer of fruit slices in the centre (this will be visible as decoration after rolling). Add a few sliced fruits, then fold the sides of the sheet before rolling. The rice paper will stick to itself, forming a seal. Keep them chilled in the refrigerator or with an ice pack if you’re heading to a picnic, then serve with the coulis for dipping.
