A fantastic toast perfect for breakfast or brunch – no need to make hollandaise sauce.
Cut the center out of both slices of bread using the edge of a glass or a cookie cutter. Spread each slice with a little butter and place cheddar and torn young spinach leaves on them — pack as much cheese and spinach as possible. Heat a large non‑stick skillet over medium heat and drizzle with olive oil.
When the skillet is hot, assemble the bread into a sandwich. Using a fish spatula, place it in the skillet and press down to toast. Cook 4‑5 minutes over medium heat, until the cheese starts to melt.
Flip the sandwich and crack an egg into the centre opening. Cover the skillet with a lid so the egg sets for 3‑4 minutes. Transfer to a plate, drizzle with a little sriracha and serve with spinach or watercress on the side.
