Egg bread, pain perdu or French toast – this classic breakfast dish has many names and just as many topping variations. We love them with fresh berries.
Whisk together eggs, milk, cream, vanilla and cinnamon. Place the brioche slices in a single layer in a shallow dish and pour the egg mixture over them. Let soak for 2‑3 minutes, then carefully flip and leave for another 2 minutes.
Heat 1 tbsp vegetable oil and butter in a non‑stick pan over medium heat until foam appears. Carefully lift the two soaked brioche slices from the dish and place them in the pan. Fry for 3 minutes on each side until golden and crisp, then transfer to a rack over a tray in a warm oven while you finish the remaining slices.
Serve sprinkled with powdered sugar and scattered fresh berries, if desired.
