Five-spice powder

An ancient spice blend used in Chinese cuisine that combines sweet cinnamon and cloves, fennel seed and star anise, as well as piquant Szechuan pepper.

Ingredients

  • cinnamon2 tbsp tbsp

    or 2 cinnamon sticks

  • fennel seed1 tbsp tbsp
  • star anise6
  • Sichuan pepper2 tsp tsp
  • whole cloves1 tsp tsp

Step-by-step instructions

    Toast the whole spices in a small pan until they become aromatic and develop a one‑to‑two shade darker color. Do not skip this step, as it greatly enhances the flavor.

    Transfer them to a spice grinder (or use a mortar and pestle), then add any pre‑ground spices and dry herbs as needed and grind to a fine powder. Store in an airtight jar for up to six months.
