Filet Mignon With Dijon Sauce

Ingredients

4 serv.
  • steaks, filet mignon4
  • ground black pepper1⁄4 teaspoon
  • peanut oil2 teaspoons
  • onions, finely chopped4 teaspoons
  • dry sherry2 tablespoons
  • whipping cream1⁄4 cup
  • Dijon mustard2 tablespoons

Step-by-step instructions

    Season steaks with pepper.

    Heat oil in large skillet on high heat.

  3. 3

    Add steaks, cook 2 to 3 minutes on each side or until browned on both sides.

  4. 4

    Reduce heat to medium.

  5. 5

    Continue to cook 3 to 4 minutes or until medium doneness, turning occasionally.

    Remove steaks from skillet, cover to keep warm.

  7. 7

    Discard drippings from skillet.

  8. 8

    Add onions to skillet, cook and stir until tender.

  9. 9

    Add sherry; stir to loosen browned bits from bottom of skillet.

  10. 10

    Stir in cream and mustard; cook until thickened stirring occasionally.

  11. 11

    Plate filet's and spoon sauce over each filet.
