Give homemade fig jam to family and friends. It’s an ideal accompaniment to fresh bread for breakfast, or try mixing it with natural yogurt.
Place the figs and 150 ml water in a large heavy saucepan. Bring to a gentle boil and simmer for 5 minutes until the figs are soft and release their juice. Add the orange zest, sugar and lemon juice. Bring back to a boil and cook, stirring regularly, for about 5–7 minutes until the mixture thickens, skimming off any foam that rises to the surface. Remove from heat and let stand for 10 minutes.
Transfer the mixture into sterilised jars. Close with lids and let cool completely. It will keep for six months sealed and for two weeks in the refrigerator after opening.
