Who said fillings have to be inside? This classic favorite gets a modern twist with an egg baked inside the bread alongside bacon.
Heat a little oil in a large non‑stick pan. Fry the bacon until crisp, then place it on a plate covered with foil to keep warm.
Using a cookie cutter, cut a hole in one slice of bread, then spread mayonnaise on one side of both slices. Fry the bread in the same pan. When one side is browned, flip both slices and crack the egg into the hole. Fry 2‑3 minutes, then lower the heat and cover the pan until the white sets but the yolk remains runny. Remove everything from the pan.
Spread sauce on the slice without the egg, add the bacon, then top with the egg‑filled slice. Cut in half and serve.
