Light Vegan Pancakes

Make this wonderful base for vegan pancakes: use your favorite plant milk and add vegan chocolate chips, blueberries or anything else you like.

Ingredients

4 serv.
  • self‑rising flour300g/12oz g
  • baking powder1 tsp tsp
  • sugar1 tbsp tbsp

    (any type)

  • vanilla extract1 tbsp tbsp
  • plant milk400ml/14fl oz ml

    (e.g., oat, almond or soy)

  • vegetable oil1 tbsp tbsp

    (for frying)

  • banana

    (slices, blueberries, maple syrup, vegan chocolate chips, plant yogurt)

Step-by-step instructions

    Whisk the flour, baking powder, sugar, vanilla extract and a pinch of salt in a bowl using a whisk until smooth. Slowly pour in the plant milk until you obtain a smooth, thick batter.

    Heat a little oil in a non‑stick pan over medium‑low heat and pour 2 tbsp of batter per pancake, forming small round pancakes. Cook in batches of two‑to‑three at a time. Fry 3‑4 minutes until the edges set and bubbles appear on the surface. Flip the pancakes and fry another 2‑3 minutes until golden on both sides and cooked through. Keep them warm in a low oven while you finish the rest.

    Serve stacked with plenty of your favorite toppings, or serve individual bowls of toppings so everyone can add their own.
