Use a slow cooker to make this light lentil soup with leeks and carrots for lunch or dinner. It is filling and nutritious, with low calories and fat content.

Ingredients

  • vegetable or stock broth750ml ml
  • red lentils75g g
  • carrot3

    finely chopped

  • medium leek1

    chopped (150g)

  • parsleysmall handful chopped

    small handful chopped, for garnish

Step-by-step instructions

    Place the broth, lentils, carrot and leeks into the slow cooker and select the 'thick soup' setting. Ensure the level does not exceed the maximum fill line. The soup may foam initially, but don't worry – the foam will disappear during cooking.

    After the cycle finishes, check that the lentils are tender and season well. Sprinkle with parsley before serving.
