Enjoy these onion rings in a lager batter as a snack or serve them as part of an American snack plate together with BBQ chicken pieces and mac‑n‑cheese.
Pour the vinegar, sugar, 50 ml water and 1 tsp salt into a saucepan, bring to a boil, then remove from heat. Add the onions to the pot, cover with a lid and let cool to marinate. It will keep for 24 hours.
Pour oil into a large skillet so it fills no more than a third of its volume, and heat to 180 °C. In a bowl combine flour, cayenne pepper, ground coriander and 1 tsp salt, set aside.
To make the batter, mix the flours and soda in a bowl, then slowly whisk in the lager. Drain the marinated onion rings and coat them in the spiced flour mixture. Carefully dip each ring into the batter, then fry in the hot oil for 2–3 minutes until golden and crisp. Drain on paper towels and season with paprika and a pinch of sea salt.
