Family comfort food can't be better than a hotpot. This lamb version is a great choice for busy weekday evenings, requiring only 15 minutes of prep.
Boil the potatoes in a pot of boiling water for 15 minutes until partially cooked, then drain and let them steam, dry and cool.
Heat oven to 200C/180C fan/gas 6. Heat oil in a large pan and fry the onion for 10 minutes or until it begins to soften. Add the carrots and cook 5 minutes until tender. Transfer the carrot and onion mixture to a large 2‑liter ovenproof dish. Return the pan to high heat. Fry the lamb meatballs, turning them until they become golden on the outside. Transfer the meatballs to the ovenproof dish. Pour the gravy and add the bay leaves and thyme sprigs.
Thinly slice the cooled potatoes and spread them over the meatballs. Brush the potatoes with 1‑2 tsp oil and add a generous pinch of black pepper. Bake in the oven for 20‑25 minutes until the potatoes are soft and start to crisp at the edges, and the gravy comes to a boil.
